Basil Stuffed Chicken Breasts…A Weeknight Dinner Recipe From Sweet Basil

  1. 6 slices bacon
  2. 2 cups coarsely chopped basil
  3. 1 small garlic clove
  4. 1/4 cup extra-virgin olive oil
  5. 1/2 teaspoon fresh lemon juice
  6. Salt (Dash)
  7. 4 skinless, boneless chicken breast halves, halved diagonally
  8. Freshly ground pepper (Dash)
  9. 1 cup all-purpose flour
  10. 2 large eggs, lightly beaten
  11. 1 cup fine fresh bread crumbs
  12. 2 tablespoons unsalted butter
  13. 2 tablespoons pure olive oil


  1.  In a large skillet, cook the bacon over moderate heat until crisp, about 5 minutes. Drain, then coarsely chop the bacon. In a food processor, puree the bacon, basil and garlic to a paste. With the machine on, add the olive oil in a thin stream. Transfer the stuffing to a bowl. Stir in the lemon juice and season with salt.
  2.  Make a 1-inch horizontal incision in each piece of chicken to form a pocket. Spoon 1 tablespoon of the basil stuffing into each pocket and press gently…
