Cheesy Ranch Potatoes

1-046I must warn you, this is NOT a healthy dish…but it most definitely is a delicious comfort food!!! One of my favorite types of recipes is a versatile one, that you can use whatever you have that’s half gone, taking up space or about to be wasted and make a new family favorite dish! You can use any kind of potatoes, any kind or mixture of cheese, even substitute the Ranch for onion soup mix or any number of yummy concoctions…Feeling creative? Let me know what you come up with!   • 1 pound small potatoes, washed and sliced
  • 1 package of Hidden Valley Ranch original seasoning mix
  • cheese (I use 6-8 oz. of Velveeta, cubed and a cup of shredded cheese)
  • chives
  • bacon

Preheat the oven to 400 degrees. Scrub and rinse your potatoes well. Cut potatoes into bite sized pieces. Place them into a large pot of boiling water, and allow them to boil for about 20 minutes.You want them soft, but not mushy. Prepare your topping while the potatoes are boiling….mix your cheese, ranch, chives and bacon or get really creative!

Grease a baking dish. Place boiled potatoes on the baking dish. Add topping to the potatoes. Lightly toss the potatoes and mixture together. Smooth out. Cover with aluminum foil. Bake for about 20 minutes.
