Avocado Pesto Pasta…An In Season Recipe From Sweet Basil

This recipe is so easy! Transforms easily into a gluten free or even more heart friendly dish with simply your choice of pasta. You can use a pre-made pesto, or try my favorite pesto recipe.

Avocado Pesto Pasta Salad
INGREDIENTS 
1 packet rice penne pasta 
1 cup cherry tomatoes, cut in half
1 large ripe avocado, peel and dice
1/2 small red onion, chopped
1 large lemon, juiced
4 tablespoons fresh pesto 
Sea salt and black pepper
DIRECTIONS
Cook pasta according to the instructions on the packet.
Cut tomatoes into halves. Peel and dice avocado. Cut lemon in half, juice.
Drain the pasta and add to the rest of the ingredients. Season with sea salt and black pepper. Mix well to combine and serve at room temperature.
