4-6 chicken breasts or leg quarters
2 medium bell peppers, chopped fine
2 stalks of celery, chopped fine
12 oz. half and half
large package of sliced mushrooms
3 c. tomatoes (diced or stewed into small pieces)
2 banana peppers, diced
1 jalapeno, finely diced
1/2 tsp. dried red chili pepper
2 tsp. basil
2 tsp. cilantro
1 tsp. oregano
1 tsp. thyme
1 tsp. rosemary
2 tsp. ground sage
2 bay leaves (finely chopped)
2 tbsp. olive oil
1 1/2 tbsp. Tex Joy steak seasoning (or salt and pepper to taste)
16 oz. of shredded cheese (I prefer 1/2 cheddar and 1/2 Colby Jack or Mexican blend)
Heat even to 350 degrees.
Boil chicken in a large stock pot. Allow chicken to cool, pull meat and shred, reserving broth.
Chop vegetables and herbs.
Boil pasta in reserved chicken broth, about 8-10 minutes. (Pasta should be slightly sticky.) Drain pasta.
In a large skillet, saute mushrooms using olive oil. Next add peppers and celery, herbs and dried chili pepper, stir thoroughly and cook over medium heat until vegetables are soft and tender (but not mushy). Add tomatoes and 1 cup of broth, cooking on low until softly bubbling.
In an extra large mixing bowl, add pasta, half and half and vegetable mixture. Toss thoroughly. Add shredded chicken, stir. Pour into a large casserole dish, top with shredded cheese. Cover with aluminum foil. Bake at 350 degrees for 45 minutes.
