Homemade Mashed Potatoes…A Classic Recipe From Sweet Basil


3 lbs. potatoes, peeled and quartered

3-4 oz. light sour cream

3 tbsp. butter

1-2 oz. chicken broth


Fill large stock pot with water, add potatoes. Boil about 45 minutes, or until tender. Drain water.

Add butter to a mixing bow. Add potatoes. Use a mixer (or hand masher) to blend potatoes and butter. Add liquid ingredients and sour cream, mix on low speed carefully. Once liquid ingredients are blended in, add salt and pepper to taste and mix thoroughly.

If using russet potatoes, use a little more of the liquid ingredients and sour cream. This recipe is not a science, it is a definitely a taste and go.
