Cole Slaw…A Fresh Recipe From Sweet Basil

Ingredients for the slaw

1 pound green cabbage (about half a medium cabbage)

1 large carrot, peeled

1/2 small white onion

Ingredients for the dressing
1 tablespoon distilled apple cider or white vinegar

1/2 cup mayonnaise

1 tablespoon white sugar

1/4 teaspoon salt

1/4 teaspoon ground black pepper

1/2 teaspoon celery seeds (not celery salt)

DIRECTIONS
1) Cut the cabbage, carrot, and onion: Chopped or grated work best. I find using a cheese grater or a food processor for the cabbage and onions, and a  potato slicer for the carrots to keep them crunchy- gives the slaw just the right texture combination. (See picture.)

2) Whisk together the dressing in a large bowl. Add the cabbage, carrot, and onion. Cover, taste, and adjust seasonings. Chill for at least 1 hour if possible.
