Sweet & Spicy Carrot Fries…A Healthy Recipe From Sweet Basil

  • 1 lb. carrots, trimmed, peeled and cut into match sticks. Roughly 1/4″ square
  • Olive oil to coat
  • 1/2 tsp. kosher salt
  • 1 tsp. pure maple syrup
  • 1/4 tsp. cayenne- more or less depending on your spice preference. (I personally like just a bit more.)
  • big pinch curry powder
  • big pinch paprika or hot paprika

  1. Heat oven to 400 degrees.
  2. Cut your carrots- they don’t have to be perfect- just try to make sure they all have roughly the same surface area so they will cook evenly.
  3. Toss carrots with enough olive oil to coat.
  4. Line a large, rimmed baking pan with parchment paper. Spread carrots out on baking sheet.

6. Sprinkle with salt and the spices-feel free to play around with amounts and your own add ins to your liking.
7. Toss everything together and spread carrots out evenly.
8. Slide pan into the oven for about 20 minutes, tossing them a few times while they bake.
9. Serve hot and enjoy!
