2 tablespoons fresh lemon juice
1 tablespoon Kraft Miracle Whip light or Mayo
3 tablespoons extra-virgin olive oil
Salt and freshly ground pepper
4 cups spinach (4 ounces)
1 apple, cored and cut into matchsticks
2 tangelos, peeled and cut into bite sized pieces
1/4 cup roasted almonds, chopped (or any other nuts or granola for crunch)
In a large bowl, whisk the lemon juice with the mayonnaise. Gradually whisk in the olive oil and season with salt and pepper. Add the spinach, apple tangelos and almonds, toss well and serve.
