2 zucchini, sliced
1 large sweet potato, peeled and chopped
1 small or ½ large onion, cut into fourths and sliced
1 red bell pepper, cut into strips
¼ cup olive oil
1 Tbsp. fresh rosemary chopped or 1 tsp. dried
¼ to ½ tsp. salt
¼ tsp. pepper
Preheat oven to 400 F.
Prepare the vegetables and place in a medium bowl.
Add oil, rosemary, salt and pepper to the veggies and mix well.
Place on a large roasting pan and cook for about 30 minutes or until tender and lightly browned.
Add more salt and pepper to taste.
