Easy, classic baked summer squash recipe. Fresh, cut herbs can be used along with, or in place of the onion to contrast the sweetness of the squash.
- Slice squash, into 1/4 to 1/2 inch round sized pieces.
- Melt butter in large skillet.
- Add onion (herbs if desired) and cook just till tender.
- Add yellow squash and continue cooking over medium heat, stirring until squash begins to soften.
- Cover and continue cooking over low heat until nice and tender (usually about 20-25 minutes).
- Salt and pepper, to taste.
