Baked Yellow Squash…In Season Now!

Easy, classic baked summer squash recipe. Fresh, cut herbs can be used along with, or in  place of the onion to contrast the sweetness of the squash.  images-8.jpeg

 

INGREDIENTS

  • 6 medium summer squash, sliced
  • 1⁄4cup  butter
  • 1 medium  onion, sliced thinly or diced
  • salt & pepper

 

DIRECTIONS

  1. Slice squash, into 1/4 to 1/2 inch  round sized pieces.
  2. Melt butter in large skillet.
  3. Add onion (herbs if desired) and cook just till tender.
  4. Add yellow squash and continue cooking over medium heat, stirring until squash begins to soften.
  5. Cover and continue cooking over low heat until nice and tender (usually about 20-25 minutes).
  6. Salt and pepper, to taste.
